Zesty chicken with honey

What you'll need


  • 1 chicken breast, 1 chicken leg and 2 chicken wings
  • Zest of 2 limes
  • Zest of 1 orange
  • 4 tbsp of honey
  • 2 tbsp of fresh ginger peeled and cut into small pieces
  • Pinch of black pepper
  • Pinch of salt
  • 1 red chilli – cut and remove the seeds then cut into fine prices
  • 5 of pieces garlic (chopped)
  • 1 large potato (skin on)
  • 1 tbsp of butter
  • ½ cup of corn oil
  • 2 spring onions (chopped finely green and white part)

  • Wash the chicken pieces in cold water then put into a big mixing bowl.
  • Marinate the chicken for two hours or overnight so it absorbs all the delicious flavours.
  • Sprinkle the chicken with salt and black pepper.
  • Add 3 tbsp of corn oil and zest of one orange and lemon, in addition to the lime juice.
  • Then add 4 tbsp of honey.
  • Peel the ginger, dice it into small pieces, and add it to the chicken.
  • Peel the garlic, dice it, and add it to the chicken.
  • Cut the chilli in two halves, and take the seeds out .Then dice the chili into small pieces and add it to the chicken.
  • Mix the chicken with the zesty citrus and honey flavours, then cover it with a plastic wrap
  • Put the chicken in the fridge for at least 2 hours. For extra flavour, leave the chicken to marinate in the fridge overnight.

Prepare the crushed potatoes:

  • These can be cooked approximately 30 minutes before you are ready to eat.
  • Wash the potato and keep the skin on, then cut it into medium-sized cubes.
  • Put the potatoes in a medium saucepan, enough water to cover them,and a pinch of salt.
  • Leave it for approximately 20 minutes to be cooked, or until it becomes soft.
  • When the potatoes get cooked, take them out of the water, and roughly crush them with a fork.
  • Add 1 tbsp of butter and the sliced spring onions. Keep the potatoes on the side for serving time.
  • Take the chopped garlic and fry it in a small saucepan with oil. Drain and set aside until the end.

Cook the chicken:

  • Chef Elias recommends sealing in all the juices and creating a delicious golden skin on the chicken, so first you need to cook the chicken on a grill, then put it in the oven, as explained in the following steps:

  • Preheat the oven to 180°C

  • Heat a grill pan in high temperature
  • Put the chicken into that pan and heat each side sit for approximately 3 minutes. Then put the chicken in an oven tray to be cooked for 15 minutes.


  • Reheat the crushed potatoes by putting the saucepan back on the heat for a few minutes.
  • Put the chicken on a serving platter and scoop out potatoes next to the chicken.
  • Sprinkle the fried garlic on the top of the crushed potato. Use garlic as much as you like to make the crushed potatoes extra delicious!
