Caramelized apple tart

What you'll need


  • 4 green apples
  • 1 vanilla pod or ½ tsp of vanilla essence
  • 1 tbsp. of icing sugar for dusting
  • 1 tbsp. of white sugar
  • 2 sheets of puff pastry
  • 1 tbsp. of unsalted butter
  • 3 scoops of vanilla ice cream

  • Heat the oven to 220°c.
  • Peel the apples and cut them into small squares.
  • Heat the butter in a small frying pan, and then add the chopped apples, vanilla and 1 tbsp. of white sugar.
  • Cook the mixture until it becomes soft. Stir gently and allow it to cool down.
  • Cover a baking tray with non-stick baking paper.
  • Cut the puff pastry into a rectangular shape (15cm x 5cm).
  • Put the pastry onto the baking tray and cook it for 15mins, until it gets puffy and golden in color.
  • Remove the pastry from the oven and allow it to cool down.
  • Leave the pastry in a cool place on a serving dish. Next you need to cut the pastry to remove the top.
  • Run a small sharp knife along the side approx. 1cm from the top and carefully cut the top off the pastry. It should come off easily. Put the pastry top aside until needed.
  • Take the cooled, cooked apple mixture and add it to the bottom of the pastry. Then, put three scoops of vanilla ice cream on top of the apple mix.
  • Put the top of the pastry that you cut off back on top of the ice cream.
  • To serve, sprinkle the top of the tart with icing sugar.
